Dark Chocolate Truffles

2 tbs Butter

3/4 cup heavy cream

8 oz dark chocolate (semisweet or bittersweet)

1 egg yolk, orange zest (can also add lemon & lime - zest is small pieces of peel)

1 tsp orange flavoring (can be from a bottle or an orange)

 

1. Heat cream and then add butter. Melt butter.

2. Turn off flame and add chocolate. Stir to melt. The chocolate should have a shine to it.

3. Add egg yolk and stir

4. Add zest and flavoring

5. Put the mix in a bowl and let it sit overnight in refrigerator.

6. Use a small ice cream scoop or a spoon to scoop out a small amount of mix. Roll gently, preferrably with gloves, to get a nice round shape. Let cool.

7. Melt chocolate over a pot of hot water. Melt slowly.

8. Drop a truffle ball into the melted chocolate. Use a fork to turn it over, coating it. Lift it out with a fork and tap that fork on another fork, making the excess chocolate drop off. Put on a pan with wax paper.

9. Garnish - sprinkle when still warm so garnish sticks to truffle. If rolling, just roll in your hand to get warm before rolling.

a. Sprinkle over the truffle - coco powder, cinnamon, ground cloves, nutmeg, chili powder

b. Roll in - ground almonds or other nut, coco powder, chopped candied fruit

c. Drip chocolate - melt chocolate and put in a wax paper bag and drip over truffle.

10. Present on a pretty plate or small candy papers.
